Minestrone
Minestrone is a wonderful soup and a great way to use up the odds and ends in the cabinet or freezer. You dont need to stick to the vegetables on the list. Add mushrooms, broccoli, or cauliflower in if you have just a bit leftover. This is a warming soup that is good for you. Thyme is the flavor of this soup, surprise! If you aren’t growing any in your herb garden yet you will now.
4 C Beef Bone Broth (homemade is best but can store bought will do)
2 C Cooked shell pasta
2 potatoes, peeled and cubed
1 medium yellow onion, chopped
2 stalks celery diced
1 16 oz bag frozen or 1 pint canned mixed vegetables
1 16 oz jar diced tomatoes
1 tsp minced garlic
1 Bay leaves
¼ tsp black pepper
½ tsp dried thyme
Add all ingredients except pasta and simmer until potatoes are tender. Add cooked pasta and heat through.
