Chicken Broth
Chicken broth (or bone broth) is just so delicious and so good for you! Easy to make, easy to store, and universal to use for a multitude of recipes, chicken broth is a pantry staple. Use your veggie scraps, use your chicken bones, making broth yourself can make you healthy and keep your wallet healthy!
Using everything you can is just smart. Once you’ve made the broth make sure you add what you strained out to your compost pile!
Ingredients:
Bones and meat leftover from a whole cooked chicken
Water to cover (about 6 quart jars full)
2-3 carrots chopped coarsely
1 onion, quartered
2-3 stalks celery, chopped coarsely
3-4 sprigs fresh parsley
12 whole peppercorns
2 Bay leaves
What to do:
Combine all ingredients in a large stockpot and simmer covered for 3-4 hours on low heat, stirring occasionally. The longer you simmer the richer the broth. Store in mason jars refrigerated for up to 3 weeks, or in freezer safe containers up to 3 months.
