Breakfast Sausage
You want to try this recipe! I have tried approximately 32 different combination my poor family has troopered through before finding this combo. It is great! I added an extra tsp the second time I made it and that is my new standard run. When I want it a little sweeter or “country style”, I simply add a bit of brown sugar, say half a Tbsp per pound. Sage really is the star of this blend. Breakfast will be more economical and healthier without all the preservatives of store bought sausage! Enjoy!
3 tsp rubbed sage
3 tsp salt
3 tsp parsley flake
2 tsp black pepper
1 tsp thyme
½ tsp nutmeg
½ tsp red pepper flake
Combine in a jar or airtight container and shake or stir to mix thoroughly. Recipe makes 4 pounds of sausage. 1 Tbsp per pound. Add approximately 1 tsp mix per pound if you want it a bit stronger.
For a sweeter sausage add a bit of brown sugar when mixing with pork.
