Sweet Soy Pineapple Pepper Chicken in the Crock Pot
This recipe takes longer to say than make.
This is one of those that I have pre-prepped when I buy chicken in bulk and package it, but it can be just as flavorful fresh with the tangy marinate. It’s also a great meal to make one fresh and freeze a second meal for later since the prep takes minutes.
Ingredients:
4-6 boneless skinless chicken breast (1 per serving)
1 can crushed pineapple or pineapple juice
1/8 cup soy sauce
1 bunch green onions thinly sliced
6-8 mini sweet bell peppers thinly sliced
2 C. Wild rice
1 C. Water
Marinate the chicken in the pineapple, soy, onions, and peppers overnight (I package in large Ziploc bags ahead and freeze, then just put the contents frozen right in the crock pot) super easy! If the contents stick to the bag run it under warm water for 30 seconds or so and it will pull right back.
Cook on low for 8 hours, add the rice and water 45 minutes before serving.
