Recipe of the Week – Spring Rolled Meatloaf with Lunch Options
Ingredients:
2 pounds ground beef
2 eggs
2 slices toast cubed
1 bunch green onions, finely chopped
1 /2 cup chopped greens (spinach, broccoli, peppers, whatever)
Preheat oven to 350 degrees. Mash together ground beef, eggs, and cubed toast. On a large piece of foil flatten burger to a 1 inch thick slab as wide as your meatloaf pan and as long as possible. Spread the chopped onions and greens over the meat. Using the foil to make it a bit easier at first, roll the meatloaf into a tube, pressing firmly. Drop the meatloaf into the pan and bake for 35-40 minutes covered then uncovered for 5 to brown the top. Slice and serve.
NEXT DAY IDEAS:
Slice the leftovers for pinwheel burgers the next day or crumble and toss into the skillet with 2 cups elbow mac, 1 can tomato soup, 1 can water, 1 tsp chili powder, and simmer to cook the noodles. Top with cheese and you have cheeseburger macaroni!
