Recipe of the Week – Spinach Manicotti
This is soooo easy. No boil. Just mix it all together and stuff in the shells and bake. Kid and man approved even though it’s a meatless dish!
Ingredients:
1 jars spaghetti sauce
1 jars spaghetti sauce
1 16 ounce box Manicotti noodles
1 15 ounce container ricotta…
1 15 ounce container cottage cheese
1 10 ounce package spinach, finely chopped
¾ cup water
2 cup shredded Mozzarella cheese, divided 1 ½ and ½ cups
3/4 cup Parmesan cheese
1 tsp garlic powder
1 tsp Parsley, dried
Preheat oven to 350 degrees. Combine ricotta, cottage cheese, spinach, 1 ½ cup mozzarella, parmesan, and spices. Spread ½ cup sauce over bottom of baking dish. Spoon stuff cheese/spinach mixture into dry manicotti shells. Arrange shells in single layer in baking dish. Pour remaining sauce overtop and sprinkle reserve mozzarella over. Pour ¾ cup water in bottom of baking dish and cover with foil, bake for 35-40 minutes.
