Recipe of the Week – Garlic Sauce Chicken & Lunch Wrap
Garlic Sauce Chicken
6 boneless skinless chicken breast
2 TBSP Butter
3 cloves fresh garlic, minced
2 TBSP flour…
1 bunch green onions, finely chopped (@ 1/8 cup)
1 Cup Water
In a medium skillet, melt butter. Over medium heat cook chicken through and brown on both sides. Remove to pan and place on plate. Add onion and garlic and sauté until browned. Sprinkle flour into pan and toss with browned garlic and onions. Slowly add water in stirring constantly. Bring to a simmer for approximately 2 minutes and return chicken to pan, allow to simmer for an additional 5 minutes to coat chicken well. Serve with vegetable and prepared rice.
Set aside 2 breasts to cube for lunches tomorrow. Serve remaining. Rice make 6 cups. 1 cup serving for dinner, 1/2 cup servings for wraps.
Mix the leftovers in a bowl the night before during dinner cleanup, then just scoop to serve at lunchtime.

Chicken Wrap
Each serving:
1/2 cup rice
3 ounces cooked chicken, cubed
1 ounce chopped spinach
1 flour tortilla
optional chopped tomatoes, cheese, avocado slices
Cold or warm.
