Lemon Drop Soup
Do you love lemon? You will love this soup. I have to admit I am normally not a big fan of all things lemony… however this soup has just the right hint of lemon. I made it one day when I was a little under the weather and it cleared things right up for me also, so there’s that.
This is a simple soup. Lemon Drop easily compliments any Italian dish, and can be served before or after the main course (depending on the traditions you follow). Lemon is considered a palate cleanser. When serving a heavy or deep flavored appetizer this soup is a wonderful break before the main course also. Enjoy!
4 C Chicken Broth
½ C Cooked rice
1 lemon
1 egg
Heat broth and rice to simmering. Pour half of soup into a bowl, squeeze in the juice from the lemon and stir in 1 egg. Return to pan and heat to temperature suitable to serve. f-fade wf-
