Old fashioned meatloaf
This meatloaf is literally the best I have ever made OR tasted. Eating this reminds me of visiting my grandma as a small child. The taste, smelling it cooking, just takes me back to her tiny kitchen. The sage really makes this excellent however be careful NOT to use more than the recipe amount as sage is a potent herb. PROTIP: if you are using a high fat content beef (85% blend) make sure to leave a good half inch open at the top of the pan so the fat doesn’t overflow into your oven before it bakes down.
½ C Bread Crumbs
1/3 C Milk
1 eggs
½ tsp salt
¼ tsp Sage, ground dry
1/8 tsp black pepper
¾ lb ground beef
¼ lb ground pork
½ yellow onion, finely chopped
Combine the bread crumbs to the pepper in order and set aside. Combine the meats and onion until well mixed. Fold meat mixture into bread crumb mixture until fully mixed and press into a meatloaf or bread pan. Bake in a preheated oven at 350 degrees for 45 minutes covered, then uncovered for an additional 10 to brown top. Some folks like to top with ketchup or chili sauce during this last 10 minutes of baking, however this meatloaf has such a great flavor I have started just serving chili sauce on the side or drizzling it over it before I eat. Serve with foil wrapped baked potatoes and creamy green beans!
